对于想学习 cocktails 的朋友我强烈推荐这本书,它是纽约酒吧 Death & Co 出的一本教材,从现代的视角解构了传统 cocktails,把它分成了核心的六大类(譬如 old fashioned, Daiquiri, Highball 等),解释了每类酒的 Core, Balance 以及 Seasoning,既教了怎么调制传统的 cocktails、推荐使用哪些牌子的酒、哪些原料和工艺的作用是什么,也教了为什么以前的 recipes 是这样的,有哪些地方可以改进,知道原理以后也可以自己创造自己最喜欢的 cocktails,对于学习调酒来说实用性非常强。我是一直把这本书,以及他们家的另一本 『Cocktail Codex 』 摆书架上当字典查阅的。一方面我会用它看 recipes,学习每一种原料和工艺的作用,这样子就算买不到一模一样的原料也可以很容易地找到替代品,喝完后还能根据味道参考书中写的原理调整下一次调酒时各配比的用量和原料。不过得说明,这本书的许多方子不太适合家庭调酒,因为有许多细节在家里是做不出来的,不过学习嘛,总归是可以学的。调酒在我看来和做饭差不多,要把所谓「玄学」剔除出制作过程,真正根据自己口味、参考最完美的食谱做出满足最适合自己的 cocktails。
另外我在纽约的时候拜访了这家酒吧,给我直接喝到天上去了。虽然用的是他们家的教材,但因为很多细节在家里做不到,跟在店里喝到的就是两种东西了。总之去纽约探店的话强推这家。
